Deleted all but two of the offending files; everything seems to be
working fine. However there were two files marked by clamscan as:

/.evolution/mail/local/Bill (Personal): HTML.Phishing.Bank-394 FOUND
I don't want to remove my Inbox or Bill (Personal) and those two
Phishing emails are not visible through evo to delete. So, how do I get
rid of them?
They are probably deleted but not expunged.
Which would mean you could see them by deselecting "View->Hide Deleted
Messages".
To delete them expunge the mailbox:-
* Select that mailbox
* Folder->Expunge (or control-e)
or do it wholesale and use "File->Empty Trash" which expunges all
folders that evolution can see.
