FWIW, the file permissions of the xml files and directories in
~/.gconf/apps/evolution would have been interesting in particular.

OK, so it's neither file permissions nor GConf daemon. The Default
Folders are stored inside the accounts settings. As you can create new
accounts (and they persist after closing Evo?) it's not that file.

You will need to wait for RPMs to be released (by RH or any third party
packager you trust) for your distro.

Or build it yourself, but I don't assume, this is an option, is it? ;-)
