You can create multiple Evolution windows using File / New Window, and
actually, if you have only one windows open, Close and Quit behaves very
much the same.
In a perfect world, where Mailer/Contacts/Calendar/Tasks components were
seperate applications (either logically or `physically`), no "Quit" menu
item should have been displayed, and thus, Joe User would not be allowed
to create new windows.
It turns out that, the world is not-so-perfect, we have logically
combined components, and to be able to have multiple of them opened in
seperate windows, you need this stuff; and you also need some way to
close them :)
