Why would you want to run xterm or mozilla from Evolution? I already
have a panel with my launchers on... why not add a launcher to your
dock/panel/kicker?

Running fetchmail every 5 minutes doesn't put a lot of load on the
system, as 90% of the time it is waiting for the network.
