What version of Evolution are you using?  If you are using 1.4 check out
http://bugzilla.ximian.com/show_bug.cgi?id=43974 there is a manual fix
you can make to ~/.gconf/apps/evolution/mail/%gconf.xml file.  Or back
down to 1.2 and wait for 1.4.1 to fix this problem.
