I was able to delete my ~/evolution directory (rm -rf!) and yet when I
loaded up Evolution, it still had all my settings and old email in
place. I even deleted ~/.gnome...but my old Evolution settings are still
there when I re-run Evolution.
settings are kept in ~/evolution. The problem might be that although
you've closed evolution, evolution-mail might be still running when you
remove the directory, so the files are still in memory.
So:
$ killev
$ rm -rf ~/evolution
$ evolution
cheers
--
