As Damon requested I ran 'date' and 'date -u' and got:
$ date
Thu Oct 18 10:44:14 GMT+1 2001
$ date -u
Thu Oct 18 11:44:17 UTC 2001
The GMT+1 is correct for Denmark and Copenhagen goes.
Actually, the signs work in the opposite way you expect here.
You really wanted "Etc/GMT-1", for an hour ahead of UTC.
But of course that won't take daylight-savings time into account,
so "Europe/Copenhagen" is best.
