I've  a couple of questions regarding IMAP operation with RC1 of
evolution as provided in Debian unstable. Is it possible to start
evolution in disconnected mode

No, but you can just click the disconnect button or choose "work
offline" from the menu right after you start. If it's in the process of
trying to connect to your IMAP server at that point, it will stop and
let you use it disconnected. (For old-timers who are wondering, this was
added around 0.16 or so.)

Also, is it possible to view the calendar folder offered by Exchange via
IMAP as a calendar?

It's not possible in Evolution as it exists. You could hack things up to
make it sort-of-doable. But it wouldn't be trivial. First off, the mail
component doesn't know how to create calendar views, so the data would
have to be shuttled back and forth between the mailer and calendar,
which would require some new CORBA interfaces or something. Second, you
can't search/sort the folder in calendar-relevant ways, so it would have
to download every message and work with them locally. Third, it would be
read only, since if you append new messages to the folder, they don't
get the right MAPI magic assigned to them, so to Outlook/Exchange, they
just look like email messages containing appointment info rather than
actual appointments.
