I've tried the operation  is disconnected mode, and I can confirm that
it works - sort of. 

When you start evo with no network on the system ( I ejected my network
card from the laptop ), evo complains about not being able to find the
IMAP server. I clear the dialogues, and then tell it to go disconnected.
All is fine, I see the headers but no message bodies even if I accessed
them the last time. Oh well. I then insert my network card, and let the
network establish. I then tell evo to go connected, at which point it
tells me that my password is incorrect for the server. I the  get
presented with a password dialogue, which I put my password into, but I
then get a dialogue whch tells me " 
Error while 'Opening store
imap://domain%2Fusername server/;filter;use_lsub;check_all': 
IMAP command failed: Mailbox name is invalid." 

I then exit evo, enter it again and it downloads all of my header
summary information again, which with 2700+ emails wouldn't be too much
fun over a dialup. My username and password information is definitely
correct, so something odd is going on ...

No, but you can just click the disconnect button or choose "work
offline" from the menu right after you start. If it's in the process of
trying to connect to your IMAP server at that point, it will stop and
let you use it disconnected. (For old-timers who are wondering, this was
added around 0.16 or so.)

Also, is it possible to view the calendar folder offered by Exchange via
IMAP as a calendar?

It's not possible in Evolution as it exists. You could hack things up to
make it sort-of-doable. But it wouldn't be trivial. First off, the mail
component doesn't know how to create calendar views, so the data would
have to be shuttled back and forth between the mailer and calendar,
which would require some new CORBA interfaces or something. Second, you
can't search/sort the folder in calendar-relevant ways, so it would have
to download every message and work with them locally. Third, it would be
read only, since if you append new messages to the folder, they don't
get the right MAPI magic assigned to them, so to Outlook/Exchange, they
just look like email messages containing appointment info rather than
actual appointments.
