Or I drag an email from the person to the contacts folder - which
automatically (semi-)fills out a new contact form with the information
gleaned form the email.


Is this an evolution feature ?


No, it's an Outlook feature.

I would like it very much, but it doesn't work for me :(.


Drag an drop does not yet work with Evolution.
