Hi Abdellah

Go to System->Preferences->Appearence. Choose "Interface" tab, put
checkbox for editable accelerators in menu.

Next go to Evince, select "Fit width" menu item, but don't activate it.
Press any key you want. It will appear as shortcut for "Fit width"

Use it.
