I like simple UIs (and code!) and also suffer when nice-to-have
features menace making the main use cases less straightforward by the
addition of UI controls, etc.

One crazy suggestion maybe worth considering could be keeping evince
focused on main use cases like basic document viewing, printing, etc
and then building separate tools for more advanced use cases.

In this case, I can envision a PDF editing (though not authoring) tool
that allowed to reorder pages, select a bunch and then export or print
them, etc. Such an app would interface with poppler for doc
manipulation and would embed the EvView widget for previewing.

Does this make sense to someone else?
