The ability to "select pages" is not of much use. I vaguely remember that
(in gpdf), this was only used to select which pages you wanted to print. If
you want to selectively print pages in Evince, you should use the print
dialog (which is the logical place for such things), and choose which pages
you want to print. To print a single page, one can just navigate to that
page, open the print dialog, and select "print current page". If one wants
to print all pages except (for example) pages 4 and 5, one opens the print
dialog, and types   1-3,6-  in the "print range" input field.
