The point is to learn how Carlos does that and to demonstrate the gestures on Shell, because that video is old anyway. 

I think that many people have touch screens now ( i do! ) and can provide you demos even if you don't manage to

get Pixel on time! Which I wish to get it!

That looks awesome! If I'm lucky I'll have a chrombook pixel to do the recording on but if not I might just ask carlos for permission to use part of this video instead.
