Thanks to your help I now have the git version of 2.1.8 installed, I
think the master and it opens when I enter the command in terminal.

Before I clean up I want to know how to install the branch. Should I
uninstall what I have now and repeat the process with the branch tarball
and if so what should I download?

You can install by running "make install", but you will probably need elevated permissions in order to do so. Also, note that uninstalling with "make uninstall" is not as reliable as using a package manager, so I would not recommend installing manually unless you are comfortable with cleaning up afterwards.

If not do I download the module to which you pointed and do something
with that.
Real beginner here so please forgive dumb questions.

There is no such thing as a dumb question. :-)

You almost certainly are tracking the master branch. If you want to try out a different branch, there is a short guide on the GNOME wiki that should be of some help:

https://wiki.gnome.org/Git/Developers#Using_Branches

There are many other guides on using git branches, so please investigate those if you get stuck, and ask again if you need any more help.
