But i found how to run cheese with a version of gstreamer in my homedir.

PATH=/home/kles/Soft/gstreamer/bin/:$PATH GST_PLUGIN_PATH=/home/kles/Soft/gstreamer/lib/ GST_PLUGIN_SYSTEM_PATH=/home/kles/Soft/gstreamer/lib/ ./cheese

But I still have a lot of errors :-) :
