In short, the latest stable version is the one that you are using: 1.6.1.  The version that shipped with Ubuntu 10.04 was 1.6.0, part of the same stable series.

Banshee 1.7.3 is the latest release, and it is technically an unstable milestone on the road to the next stable series: Banshee 1.8.  Banshee uses even version numbers to indicate a stable release, and odd numbers to indicate the development releases along the way.  Because of this, the 1.7.x series, which is available in the Banshee Unstable PPA, has quite a few new features that are technically in the "testing" stages.  Any bug fixes (as opposed to new features and enhancements) should be released in both the testing (1.7.x) and stable (1.6.x) branches.  Banshee 1.8 is scheduled for release this fall, in time for Ubuntu 10.10, and it should include all of the new features that are currently available in the 1.7 series.

If you're interested in testing out some of the new features, feel free to check out 1.7.3.  Speaking from personal experience, the Banshee "testing" versions are often just as stable as the "stable" releases (as far as crashes go), but you might run into some rough edges and unexpected behavior if you play around with the brand new features.
