(I'm guessing muscular dystrophy? I have enough difficulty with computer
acronyms, medical acronyms are even more difficult to guess.)

I wish I knew more about the various accessibility software for Gnome but
hopefully others can make better suggetions.

gedit does include tags plugins so if your friend was frequently typing
difficult techinical terms you could probably make a list of them to cut
down on the repetative typing. there may be other predictive text systems
or autocomplete options but I am not as familiar with them as I might
like.
Speech to text software might be another option to consider.
