I adore Gnome's file dialog! If it was only up to me, I wouldn't
change it one bit. (Having folders and files separated is great,
having them only scroll in one direction is also great, and the
keyboard handling and tab completion is also really great.)
To make it more snazzy-looking and reviewer-pleasing, maybe the file
names should have icons next to them. I've seen people who've
complained that "the gtk file dialog doesn't even have icons!", so
maybe that should be fixed.
A preview feature could be added as well, sure, I mean, GIMP works
fine, so...
The old kde/win (am I correctly informed that both of kde and windows
changed they're file dialogs completely, recently?) were dreadful in
that a) you had to scroll past a bunch of folders to get to your
precious icons, b) you had to navigate in two dimensions (more
eye/brain-work to find files than a one-dimensional list) which made
the alphabetic sorting sub-optimal because it was hard to find the
right collumn and then the right row to click on.
