I do not see why. What am I missing? 
I think, this is not a per-project thing but more a per-user or
maybe a per-situation thing....

That is perfectly OK for me: You want the today line in the printouts,
because you like to the WYSIWYG thing. I need my printouts to 
be taped together and so I only print seldomly. The status bar and
the today line only confuse me.

For me a project is something that is alive as e.g. a petri net.
If I printed a petri net I would like to have 2 possibilities:
One two make a snapshot, of what I have on the screen. And one
to ptint out the whole net and leave all places empty to be
able to play around with it with coins or so.
