In Bullseye you get version 5.4.0. That's good enough however Jos Lemeens just released version 5.5.2.
You can get it directly from his website http://jlemmens.nl/
Download link of the Debian binary package:

Installation:
dpkg -i ebook-speaker_5.5.2-1_amd64.deb
Caveat: I don't know how it plays with orca and a Braille device.
