Action for showing / hiding menu bar is available there too but it's not bound to a keyboard shortcut by default. Action that would focus old style menu bar is missing from the action list thus it's not possible to assign user specific keyboard shortcut for getting such a functionality back. So thanks to the gnome terminal developers this is another small part of their job where the accessibility has no longer be considered. Enjoy partially accessible gnome experience until it lasts.
