This behavior repeats on all the submenus I try and expand.
This is with orca master, and LO still 5.1.5-3 on arch-linux 64bit.

I don't know about that.

My question is how can I change the color of a column in a table, or any other selected table component for 
that matter, or selected text of any kind?

The solution to change the color is :
0) Place your cursor on the column you want to select
1) Select the table column with the table menu and select submenu
2) On the table menu, go to the property item
3) Go to the background tab
4) Use tab until to hear the "color background" label and move with up/down and right/left arrows.
