Is there any chance you could use the desktop edition, but install 
whatever software you need for your school work? After all, any software 
that will run on ubuntu server will run on ubuntu desktop. I don't know 
how easy server edition is to install, but unless it comes with a 
desktop it's likely inaccessible unless speakup is included, which is 
unlikely.
