There are of course other flavours that already have said things setup
out of the box and much more.
I would suggest using some live cds and deciding which you like best.

Some concentrate on specific things such as light weight desktops or
portability whilst others concentrate on the end user transitioning.
As open source usually offers, accessibility has plenty of options.
