Hi !
The GNOME user documentation can be helpful to learn how to interact
with the system. You can check the documentation offline if you have the
application "yelp" installed.
You can also check the documentation in the web. About keyboard
navigation we have this url for GNOME 3.6:

Like by default I get all the shortcuts for my launcher in Unity.
Window key + 1 will open the home folder, 2 will open Firefox etc.
