At least in Gnome 3 you can type the first several characters of the name of
an application to search for it from the "activities" overview.
I think the Gnome and Unity designers are trying to create desktop
environments that will function well on a variety of hardware, from
workstations with large monitors down to tablets or even phones. It's the same
user interface everywhere, or so the plan would have it.
With AT-SPI 2 now in place, Orca is in a position to run on tablets. I predict
someone will have it running (but probably not very usably) by the end of the
year, with one of the Linux desktop environments - I won't predict which one.
