There is a page in system tools/system settings, system info called 
"default applications." I'm not sure that's what you want, however, 
because it's just a bunch of unnamed combo boxes that speak nothing. 
Looks like a bug either in GTK3 or the at-spi, or it may simply be the 
current lack of an orca script in this situation. There seem to be an 
unusually high number of unspoken buttons, combo boxes, etc. in this 
early GNOME3 release, mostly in the control center.
