I using GNOME3 with fallback session, because I better like and known the old traditional categorized menu system. If future Unity is full accessible, I will be trying this environment too, but now I not used lot of time with Unity. The launcher is a good ydea to you possible putting often used application launcher with a central place. But, if you would like accessing the oldest GNOME style application categories with a menu system, you need installing the Classic Menu Indicator from a PPA.
So, now I better like using GNOME3 with fallback session.
I customized my panel lookup to I get an one column menu system. Need this step to you access for example the log out, shutdown menu items, or your username submenue related menu items (launch system settings, change your status, etc). Have some problem with fallback session, but I very like using and all thinks I possible doing with I want my works related: 1. The third old system menue is missing factory level, hopefuly this is future will be fixing developers. See following bug:

This bugreport I described how can need customizing the panel lookup to you get an one column awailable main menu system.

2. Only possible removing any panel applet your panel if you clicking your selected applet with alt+right mouse click. Have a workaround if you simulate an Orca right click of flatrewiew, but need combine this keystroke with left ALT key. For example, if you using laptop layout, when you land the selected panel applet, you need using ALT+CAPSLOCK+8 keystroke to you access the "remove from panel..." menu item the selected applet. I very hope future this is will be changing the developers and restore this important menu item with normal context menue, see following bugreport:

I installed from a PPA with GNOME3 ported Ubuntu Indicator applet, the PPA is following:
ppa:jconti/gnome3
After you installed the indicator-applet-complete package, you need add the you wanted indicator applet (I don't no what the english applet name with the applets list). After you added the required indicator applet, if you press Super+S keystroke, possible accessing all prewious Ubuntu Natty awailable indicators. Possible another users with better known Unity environment tells you Unity advantages and workarounds.
