Whenever I update Firefox I untar it in /opt so that I have a directory /opt/firefox. When I first untarred it there I put a link in /usr/local/bin to /opt/firefox/firefox. This works for me, since in Ubuntu, the menu entry just points to `firefox' rather than a full path, and since /usr/local/bin is ahead of /usr/bin in the system path, the menu entry runs the new Firefox.
