sorry answering only now, but I was in London for a few days. There was
a starting discussion about that in bug #171872[1] (see also attachment
from comment #8[2]). With the new widget (which I already started
writing, even if at the moment just draw itself :) it would be easy to
have a signal emitted when a new app is chosen, the capplet will have to
grab that signal and then set mime types handler as appropriate. We just
have to pay attention to integrate it in a clean way with
gnome-volume-manager (or whatever will be its new name) and the "Open
with..." in Nautilus.
