My target in this case are desktop screens, such as restaurant POS, but
other personal and work scenarios too.
That curtain is a great Gnome3 feature, but I believe it's an error to
force it for everybody.

On touch devices, the curtain is the standard way of implementing
lock screens for a number of reasons. Such as quick viewing of
notifications, to prevent accidental unlocking or several failed
attempts that lock the device, etc.
I will note that on keyboard devices, you can both turn the screen on
and lift the curtain at the same time by pressing the Esc key.
Esc key actually help a lot here. On large screens, using a touch scree
n interface is actually more work and far less intuitive than operating
a keyboard. It takes far less time to press Esc than move my hand and
swipe the curtain off a large screen (and and even less time than
dragging the curtain off with a mouse).
No one wants to wave their hands around a large screen.
On a small 10" screen or lower, the extra effort needed to operate a
touch screen is much less.
