I have experienced similar problems. There have been quite a few
messages to this list detailing problems with Evolution conduits. I can
only suggest that you try to raise this issue with Ximian -
bugzilla.ximian.com - as the evolution conduit code is not part of the
gnome-pilot source.
Ideally, if you can reduce the problem to a simple reproducible problem
with a very small address book database, that would encourage the
curious to dig into the evo code to see where the problem lies.
Most problems I have with the evo conduits crop up after I've synced at
home and then sync at work (I usually sync at work only), but I've seen
that specific 'mobile' mobile number problem, for example, which
suggests buggy code (perhaps making assumptions about what order address
book fields come in?).
