I'm not very interested in working on GUIs, I'd rather like to stay on

We have beast/bse beast.gtk.org i am not wrong (else have a look at
www.freshmeat.net also you can contribute to glame it is some kind of
audio pipelining / filtering project glame.sourceforge.net for the
correct url.. my personal favor goes to the ultimate uber multimedia 
framework called gstreamer www.gstreamer.net so take a look at these
projects.. :) all these projects are written in C so i hope you 
can convert your C++ skills into C skills a little here and there *G*.

I'll have a look around, but any suggestion is more than welcome.
Also, can you please tell me where to find some good introductory
tutorials on GNOME/Linux for someone coming from Windows?
I think a peak @ developer.gnome.org would help you a little.
