The Cambridge latin course is wierd in many ways. If you want real latin look at the Biblia Vulgata,
Newton's Principia, Leibnitz, Hobbes, Euler for examples.
The Biblia Vulgata capitalizes the first letter of each sentence and it has been standard for a long time in latin literature.
See the vatican website: http://www.vatican.va/latin/latin_index.html
As well as every medieval latin text in existence.
