Why would an RGB editor be useful if all the professional printing
companies uses CMYK?

I would ask your printer, they will tell you exactly what they want.

Also, if you are thinking "publishing", perhaps you should think
Scribus, an open source DTP that has all the color management that you
would ever want. That answers a lot of questions for you.
