[Gimp-docs] Colors/Desaturate/Desaturate documentation

Hi All,

I think somewhere it says to please post to the docs list if someone is 
working on a specific bit of documentation.

As my first attempt at trying to help with updating the documentation, I 
want to try to update the Colors/Desaturate/Desaturate documentation to 
be current with some recent patches.

If this goes well, then maybe I can help work on updating documentation 
for GIMP 2.9/2.10 color management and layer blend/compositing modes.

I've already cloned, compiled, and installed the documentation, and 
looked at the source code. I have a general idea how to procede but I'm 
sure I'll have questions.
