I noticed the book icon in the Geary nightly flatpak, but the popover is empty (probably because there are no dictionaries in the flatpak or runtime. I suggest to include dictionaries, or give read only filesystem access to the distro dictionary folder.
Also, I notived that when you click on the book icon under wayland, you will get a Gtk-WARNING.
(geary:2): Gtk-WARNING **: Drawing a gadget with negative dimensions. Did you forget to allocate a size? (node image owner GtkSearchEntry)
The popover looks ok, so it is probably a harmless warning, but it still looks bad with a warning.

You should click on the "book icon" in the composer and enable both
languages.
