The accelerators I'm talking about are actually marked with an underline below the letter. In the italian interface "reply to all" is "rispondi a tutti" and t is underlined when you open the drop-down menu. So I was trying to use that accelerator, just for testing, with Alt + T... and accidentally I moved the conversation to trash.

Just to be precise, the underlined letters in menus and toolbars are mnemonics, and since those appear as underscores in translated strings, the translators are responsible for defining what keys trigger them.  This is different from accelerators, which are set by us, and aren't translated.

To answer your original question about making the mnemonics work, I believe that mnemonics only trigger when their associated widget is visible.  Alt + T triggers trash from just about anywhere because the toolbar is always visible.  I believe to trigger the reply to all option in the message dropdown menu, you'd need to bring up that menu (which doesn't have a keyboard shortcut at all that I know of), then press T without Alt.

That's a bit cumbersome.  The R/Shift + R accelerators to reply/to all from the toolbar replies to the last message in the conversation.  If you're trying to avoid that, I'm afraid you might have to use the mouse.  We've got a ticket for having the toolbar button/accelerator reply to the visible message: https://bugzilla.gnome.org/show_bug.cgi?id=714377.
