On my Gnome 2.2 (no garnome installed now) I read:
/apps/nautilus/preferences/show_desktop

If set to true, then nautilus will draw the icons on the desktop. 

Check the key in your version of G(AR)NOME, it should exist.

I have never tested such thing as hiding icons from desktop.
