There are three major Sudoku-specific factors here: (1) it's mostly already done, (2) it would probably be easier to implement Allan's design from the Vala codebase than from the Python one, and (3) it's a GSoC project proposal (the announcement as to whether it's accepted will come next week). If more of our games were written in Python, I don't think it would have been worth it to switch them over to Vala. The advantages to porting from Python to Vala are clearly less than they are to porting from C to Vala. But since it's the only game left, it's easier to say that we should stick to one technology, at least for the foreseeable future. I reserve the right to be wrong here. :)
