I do not see any font issue in the screenshot (and cannot follow).
However I see different icon themes. The icon theme depends on your
system settings and distribution. It is nothing in Evolution itself.

This is https://gitlab.gnome.org/GNOME/evolution/-/issues/1961 and a
fix will be included in Evolution 3.44.4.
