I've just gone to reply to your email and this is all *I* got when I
pressed reply:

Ok, I tried removing my signature from my mail account COMPLETELY and
it is still doing it, cutting off a massive portion of the email when I
hit reply. This is even without a signature.

It looks like something is getting confused by the nested blockquotes.
I suppose the workaround is to not use HTML formatted email. (Or at the
very least you can try it for a little while to see if that is the
issue.)
