So this seems to be specific to a certain account, but it's an important account, within evolution.
I have tried toggling different options in composer preferences, and nothing seems to fix it. For instance, one email in particular I have right now, if I hit reply, it includes the quoted text that the sender sent to me, then:

first of all, no need to resend the same message twice.
The second, you are better with Reply To List (Ctrl+L) here, at least
in my case.
The third, was there anything selected when you've been doing the
reply? It's a feature to include only the selected portion of the text
in the reply, when any such exists. Otherwise, I've no idea, unless
I've a test message to try to reproduce it here, but, apart of the
signature cutting and selection use, I'm not aware of any other reason
to have the text cut.

I've had the same problem occasionally as Daffy too, with too much
cutting.Will have to check if there's a common trait to those mail.
In the meantime, the Reply to list-button seems to fix some list mails, so
