You don't say what kind of account this is. POP? IMAP? Exchange?, ...

Also is there a way to customise the toobars ?

Press F1 and search for "custom".

POP always downloads the entire message. It has no mechanism for
fetching the body without the attachments. If you're seeing a delay it
must be somewhere else. Do you have "Check for new messages on start"
(under Mail Preferences for the account)?

As the Help docs say, editing the XML files is intended for people who
understand what they're doing. The format should be self-explanatory,
but no doubt someone here can clarify any doubts you may have.

Alternatively, you can submit a Request For Enhancement to include your
proposal for a spell-check button. You do that through the regular bug
reporting mechanism at https://gitlab.gnome.org/GNOME/evolution/issues/
 

If you do that, give the URL of the report here so anyone interested
can track it or add comments.
