thanks. I updated the bug. From my findings, what you see is
reproducible with the latest development code (to be 3.35.1) in On This
Computer folders, where the message doesn't contain any address from
those configured in Evolution and the folder doesn't use Send Account
Override. I cannot reproduce this in IMAP folders. That's because
Evolution cannot pair any recipient or From address with existing
account.

I wrote a bit more detail in the bug.

Maybe the Edit as New Message can be changed to use the default mail
account as the From if it cannot find any other (then there's a
question what to do with the original From address), or something like
that, to prevent the automatic turn-on of the View->From Override
Field. Maybe. I do not know. We can discuss it either here or in the
bug.
