I'm not sure where Ubuntu stores the binary, thus the path can be
different, but try to run the calendar factory with CalDAV debugging
on, to see what request preceded to the error message.
$ CALDAV_DEBUG=all /usr/libexec/evolution-calendar-factory -w
I doubt the CalDAV code invented that UUID on its own, it might be
returned by the server. The 500 error is usually a server-side issue,
thus you might to ask the server admins for an investigation. If you
give them the request which caused the 500 response they might get to
it much quicker and significantly easier.
