A Search Folder to approximate a conversation would have to include 
ALL messages in EVERY folder, which means you lose the folder tree
structure within the Search Folder. So essentially a single folder.

Thanks to everyone who commented on my question, especially Patrick for
the definition of conversation.

Hopefully someone will edit the wikipedia page so that conversations is
no longer displayed as a feature of Evolution.
