Here is source from this morning e-mail Content-Type: application/pdf; name="LAB 01 M45 (Moisture - Hearson).pdf"
I also installed Ubuntu Tweaks 14.04 (works with 15.04) and confirmed that PDF was assigned to pdfstudio9.
I just took another step. I also use Konqeror as a file
manager. I tried Konqueror to open a PDF file and nothing
happened. Further investigation showed that the file
association was not calling up psfstudio9. When I
corrected that, evolution then picked up the association.

johnl john-Vostro-3500:~$ xdg-mime query default application/pdf
pdfstudio9.desktop
johnl john-Vostro-3500:~$
However, when I go to open a PDF attachment, I get:
Save As
Open With Other Application...
OK. Can you just check the email source to see what the "Content-Type:"
is for the attached PDF - it should be "application/pdf".
