To get into your email quickly, boot from a liveCD on a flash drive of a Ubuntu which contains Evolution (did they not remove it as default MUA?)
To solve your Mint install woes, say 'strace evolution' and find out what it was doing just b4 the crash.
It might be easy in Mint to go back to a previous version of Evolution. I would find out how to do that.
